i'm doing something similar,
we took some of my mums leftoversand i'm going to make bubble and squeak, warm the turkey and do fried eggs as well.

I have leftover turkey, carrots, red cabbage, mashed potatoes (didn't keep a close enough eye when par-boiling for roasting!) - this is going to be turkey casserole with mash for 6 tomorrow, and probably sandwiches for another couple of days.
BUT - need some hints - bought far too many sprouts so I have a fridge full of peeled/trimmed raw sprouts. Can I part cook then freeze them?

Gently fry off a finely chopped onion, garlic, thin matchsticks of fresh root ginger or a blob of the lazy ginger and a tiny touch of finely chopped fresh chilli. Add your turkey stock and bring to the boil. Adjust seasoning. Add chopped leftover turkey and keep on heat until turkey meat is piping hot. Add some thin rice noodles (they cook almost instantly) or some leftover cooked rice. Chuck some fresh chopped coriander or parsley on the top if you've got some!
I like leftovers served in ways that don't make them appear like leftovers, if you know what I mean!!0 -

I have quite a bit of turkey left, cooked it on the 23rd. Does anyone know how long cooked turkey will keep in the fridge? had some tonight and it tasted ok, can I freeze it now or is it to late

i did a turkey crown just before christmas and had a chunk left over.. It needed eating so i scoured the cupboards and came up with a cheap and cheerful curried turkey pasta bake.
Stick a pan of pasta on the boil.
Chop and onion and stick in a wok / big frying pan.
throw in lumps of the turkey and fry it with the onions.
pour in a bottle of smart price curry sauce and heat up
dump the pasta in and mix it all together
pour into a baking dish and sprinkle grated cheese on the top
heat in the oven till the cheese has melted and gone crispy.
serve and eat.
I did stick a splash of Blue Dragon sweet chilli sauce on it as well when it came out for a bit of an extra tang.0 -

Just about to deal with our leftover turkey!
14lb organic turkey raised by ds's best friend, bargainous £32.50!
Has so far made a huge amount of Christmas dinner! And a large turkey curry last night - with enough to fill a large lock n lock box leftover to freeze, must try to cook smaller amounts of curry lol!
I lay in bed last night thinking about things to do with the rest of the turkey meat, remaining breast will be sliced and frozen with stock, ready to become a quick roast dinner at some unknown point in the future. Remaining meat will be stripped and bagged in usuable portions for pies and risottos and assorted other dishes (thanks for the inspiration Thriftlady - if I'd come on here last night I'd prob have got to sleep sooner, rather than dreaming up ways of using up bloomin turkey!)
No veg leftovers, few remains went in the curry yesterday! Still have lots of fresh veg though, will be stir frying sprouts (cut in halves) and parsnips (julienned) with garlic and ginger as a side dish to go with the duck that the kids have requested for tea tonight! Then I shall be busy wondering what to do with all the leftovers from that I guess! lol!GC Oct £387.69/£400, GC Nov £312.58/£400, GC Dec £111.87/£4000 -
