Thanks for posting this; I couldn't remember what the large foil-wrapped lump in the freezer was, but now I do! It's turkey!! Turkey sarnies all round tomorrow then!That's Numberwang!0

Hi all, I have a couple of recipes to share in relation to leftovers. The first was by Rachel Ray on the TV and I tried it and it is yum. Basically layer, any leftover stuffing, turkey, ham, cranberry sauce and carrots pour over some gravy and top with mashed potatoes put in the medium oven for about 40 - 45 mins and you have a delicious pie.
The second idea is a very old family tradition. The jelly that sets from the turkey can be melted in a frying pan and you can fry bread in it. The bread needs a little salt on it but is yum at breakfast time. Obviously if you have a heart condition don't try it.
Perhaps this shouldn't be moved to the recipe index yet as people will have leftovers from today.Penny xxx

Ok, so like many out there I have a freezer full of plastic boxes containing turkey meat.
I'm looking for a really interesting idea, rather than just the usual casseroles and curries, for using it.

I made cornonation turkey with a big salad last night and for once no one complained about the resurrected bird. Equal quantity of yogurt and low fat mayo mixed with 2tsp curry paste and 2 tbsp of mango chutney."Sometimes life sucks....but the alternative is unacceptable."0

How about a Vietnamese style coleslaw? Make a dressing with:
1 clove garlic (crushed)
1 small chili (chopped)
2 tbsp sugar
3 tbsp rice vinegar/white wine vinegar
juice of 1 lime
4 tbsp thai fish sauce
3 tbsp veg oil
1 small finely sliced red onion
cold cooked turkey
Leave the dressing to steep for 15 minutes, then use to dress a salad of:
1/2 chopped raw red cabbage
1 pack sliced radishes
big handful each chopped fresh mint & coriander
I adapted this from a Nigella Lawson recipe, it's really fresh and tasty and light, unlike most Christmas food!2015 comp wins - £370.25

I seem to have a freezer full of leftover Christmas turkey carcase, long after Christmas is over! We (unexpectedly) had to go away for a week on Boxing Day so I chopped up the leftovers of Christmas lunch and bagged them up along with portions of stuffing and bacon - the idea was to make soup with these through the rest of the winter.
Trouble is, we soon got bored of turkey soup, so I still have bags of the stuff. I want to defrost the freezer soon, but don't want to throw the remaining turkey away as it would be too much of a waste.
Anyone think of anything else to do with several bags of turkey bones/meat/stuffing/bits of bacon that doesn't contain any reference to 'soup'??
Any suggestions gratefully accepted!0 -
we always love a turkey curry made up from the left overs, stuffing i would just use with sunday lunch
