There won't be any leftovers here - Boxing Day is cold turkey, mash & Branston, and anything remaining goes to the cats.

My neighbour has given us a turkey today :T it's bigger than I would usually buy and I reckon I could get a few meals out of it.
I would normally get a turkey which would do us Christmas Day and enough leftover for sandwiches.

I thought of a casserole and a curry (need to find a recipe for the curry), both which could be done inmy christmas present from my in laws - a slow cooker:T

    What else could I make?
What do you make from your leftovers?

I've added your post to our existing thread on leftover turkey where you should get lots of ideas.

  • I hope you have all had a lovely holiday and have enjoyed your turkey. I have just bought a small breast joint half price in Lidl and it's frozen although they do give instructions for cooking from both frozen and chilled. The instructions say not to reheat after cooking and I wouldn't normally, but slice thinly as poss and add boiling hot gravy. It's stuffed with a pork stuffing mix and I wondered whether this is the issue. As far as I see Ican eat what I can (just me, and five portions apparently) and then freeze the cooked left overs but not reheat, so will just have to have in a salad or sandwich. Did anyone else have this problem? Do you think if I ditched the stuffing I could freeze and re-heat the left overs?

  • Assuming you cook, cool and store properly and promptly in either your fridge or freezer and follow safe storage times, then you can safely "cook" the meat again to reheat. Often the "do not reheat" information assumes people are daft enough to be reheating a joint in its whole state.

I would go with your gravy idea, I usually reheat a portion or two of frozen roast meat slices by covering them in hot gravy in a lidded oven safe dish, and putting that in a hot oven for about 20 minutes or until they are piping hot throughout (I use a thin skewer or thermometer to check the middle). Meat often comes out better after this treatment, and I'm still here! If you are worried about the stuffing, you could discard this from the meat you are keeping.

It's the stuffing that makes them cautious in their advice.

I have been slicing Strangebury's chicken breast joint with stuffing and reheating leftovers in tinfoil in the oven for several years now. I seem to have survived. Any meat not used by day 3 gets frozen (thaw before reheating when you want to use it). I wrap the slices in tinfoil and heat at the same temp (and for the same time) as I do the potatoes which is usually 30 minutes. I have reheated with and without the stuffing and still haven't poisoned myself. Hope this helps.
  • Thank you for all your responses. I think it must be the stuffing which is suspect so once it's cooked I will freeze the leftovers without it and reheat gently in hot gravy when defrosted. I don't know why I am doubting myself. I have only been doing this for the last 35 Christmases or so!

I think manufacturers are over-cautious because there are so many people who don't use their common sense when it comes to storing and reheating food.

If you've been cooking for 35+ years, trust your instincts.
