We had one of those really cheap frozen turkeys from morrisons so I didn't hold out much hope for it, but it was lovely and tasty. I did it al la phil vickery ( I think a few other chefs also do it that way) on a bed of veg and stock with plenty of foil on so it steams. A 4 kg bird was cooked by 2 1/2 hours, plus 10 mins to brown off after removing foil, basting and adding bacon.

Stripped the bird the same day, several lots to freezer for curries pies etc, the "base" juices that didn't go into my jamie o gravy (OH has instructed me to make a shipping order of this to have in the freezer for chicken dinners) became stock again in the freezer. Last bit of turkey in the cat as we speak lol.

lovely beef joint (£8 from morrisons) cooked pink and lovely on the day, done several meals/sandwiches and last bit frozen, it was so good we would have it anytime so well done morrisons, better than the "best" ranges of beef we have had in the past from mr t and mr s.

  • :o help tad confused over defrosting/freezing cooked turkey!!
Apologies if this isnt correct place to post.

I froze some cooked turkey and turkey large bones from legs and other bits,on christmas eve when I cooked my turkey.
I defrosted them overnight last nite & made curry with most of meat in slow cooker today, was yummy.
I now have bones and some bits of meat left which I want to boil up for a stock for soup, tonight or tomorrow, will I be able to freeze the soup once made? I am pretty sure cannot refreeze once cooked and defrosted?
    thanks for any advice

  • was cooked on xmas day, kept in fridge, could I use it for us or the dog tomorrow?

I have already stripped most of the meat off and frozen it, but sort of forgot about the bones!!!!

I'd use it to make soup or something. Still eating turkey cooked Christmas day here and it is fine. Going to freeze any further leftovers though.
    Trust me - I'm NOT a doctor!
  • I'd use them to make stock - they'll be fine if they were in the fridge :-D
  • make a huge stock. i did that with my sons turkey carcass and he used it to make a rissotto. stock freezes very well. if there is a lot then freeze it in bags in meal size portions.

then the dog can have it!!!!

Yes, it will be fine given that the bones were kept in the fridge. Stock gets a good long boil after all, or if made in a pressure cooker that's just as good. I'm less keen on making stock in slow cookers though as you don't get that good rolling boil going. Then I'd freeze it in useful portions, either soup sized or in half pints, for general cooking.
    Val.
  • Don't give poultry bones to the dog - they can splinter and get stuck in their throat - very bad for them.
Reason for edit? Can spell, can't type!
  • Only raw bones of any type can be given to dogs for reasons posted above.
