leftover turkey curry is better the roast IMO. That's what will happen here tomorrow.
we only had a small turkey so there will be just enough for that after DH's sandwich bonanza.

we are having hugh fearnleys wotshisnames chicken croquettes, with turkey in place of the chicken obviously, they are really tasty0

I've saved the leftover veg for bubble n squeak, (yum!)
Like the idea of freezing turkey with gravy, will be def trying that.
Probably make turkey shepherds pie, (ie turkey and stir fried veg- onions, mushrooms, peppers, leeks and carrots) in sauce - my fave is bread sauce, topped with mash.
Stir fried veg (same as mentioned before) with turkey and bacon and mashed potato and splash of soy sauce all pressed down over a very low heat in a frying pan, makes a lovely golden crust and is lovely with gravy.
There wont be any left after that lot, but will make stock with the bones ready for some leek and potato soup - my favourite.
Turkey was from aldi - along with most of the rest of the Christmas dinner, although have gone off their sage and onion stuffing so bought paxo this year - and it was delish.0 -
After 34 years of practicing, I have managed to get the portions pretty right , luckily managed plenty to eat with very little leftovers.
I can even see in my fridge!!:T0 -
haven't even had our turkey yet! At MIL's yesterday and today we had massive ham and a goose (wasn't mad about the goose - tasteless) anyway have loads of leftover boiled potatoes and carrot crush that I think I'l chuck into the ham stock for soup.
Luckily my OH will eat any old thing!Just call me Nodwah the thread killer0 -
had turkey sandwiches for lunch ( and ham and all sorts of bits! )
cold turkey, bubble & squeak and gravy for tea as just us this year! ( usually end up with loads of guests/going to family so have to do 'real' meals)
turkey carcass making stock for soup as i type.
1 whole breast in fridge to do ???? with!
all the bits to add to soup/make curry with!
also sending my mum home with a turkey leg and some bits!
would usually make a turkey & ham pie, but my mum brought a smoked ham this year and i can't eat smoked things! so got a pile of ham, but not sure what to do with it, as i won't be eating it! think i'll probably freeze it ready for sandwiches.0 -
Almost a whole breast going into freezer in morning, balance into risotto for lunch, carcass for soup. Breast will make a couple of curries or sweetand sour for us during January.
Nodwah....I LOVE goose, but would need 2 to feed my tribe and fresh ones are hugely expensive, so stay with turkey.

sorry if this has already been posted, but i use leftover turkey to make a jamie O turkey and leek pie
wash and chop leeks, add to pan with butter and thyme, leave on low for 20 mins, add 1 tablespoon of creme fraiche add turkey add 1 litre stock and simmer for 20 mins
put through a sieve saving the juices for a gravy.
put turkey/leek mixture into pie tray, top with puff pastry, gently scroll across pastry, tuck in at sides, egg wash all over, put in oven 180 for 20 mins
heat sauce and it will thicken

Really surprised about this, only had goose once but it was gorgeous and full of flavour, like duck or lamb. Was thinking of doing one for Xmas but chickened out (literally - we had chicken!), if I see one at a good price sometime this week might pick it up for New Year's Day.
My Dad would strongly advise against it though - the one time we had goose before he cooked it and the smell knocked him so sick he couldn't eat it when it was done, put him off for life! Luckily he won't be at mine on NYD if I do take the plunge!Pax Et Bonum0
