SO...Xmas dinner ran late and the turkey (breast crown) was rather dry (even though I'd been basting it). Ok but not great for dinner. But there's quite a lot left and I can't bear to chuck it, but it's too dry for sarnies/eating cold. It's quite crumbly too so I think it might disintegrate if I put it in a risotto etc.
Anyone got any good ideas/recipes to disguise the dryness/make it juicy? Everyone's moaning about it if I suggest eating it!Cash not ash from January 2nd 2011: £2565.:j

Nigel slater did sprout and parsnip type bubble and squeek ,that would be great with crumbled up turkey in them and once formed into patties could be frozen then fried when needed ?0

Turkey Chowder
1½ hours 20 min prep
1 cup finely chopped onions
1 cup finely chopped carrots
1 cup finely chopped celery
¼ cup butter
2 cup flour
3 cups turkey broth or chicken bouillon
3 cups whole milk and cup single cream.
¼ teaspoon salt
1/8 teaspoon white pepper
1 dash cayenne pepper
3 cups diced cooked turkey
4 cups potatoes cooked
3 slices diced bacon cooked
Saute! onions, carrots, celery in butter until soft but not brown. Blend in flour.
Gradually stir in broth, then cream & milk, Cook, stirring constantly, until mixture thickens.
Stir in salt, pepper, cayenne, and turkey, potatoes & bacon. Stir a few minutes until turkey is heated through.
Add and remove items according to taste or what you have in the fridge.Everything has its beauty but not everyone sees it.0 -

Turkey samosa's, turkey curry, turkey bolognaise, turkey soup, coronation turkey. I tend to cook the turkey on xmas day early, cool it, slice it, cover it with a thin gravy and reheat in a low oven. Stops it being dry.0

Similar to themull1's idea, but I would mix leftover turkey with some leftover gravy, peas and carrots and put into a pie dish. Simply add a shop bought or homemade pastry lid to the top, brush with milk and bake until golden brown. Serve with some potatoes.
By the way, I wouldn't bother trying to slice it if it is disintegrating, just strip it with your fingers into chunks, cut them up into bite sized pieces if too large.Thanks to MSE, I am mortgage free!

Ours was overcooked too
I made turkey and bacon pies yesterday:
Chop two onions and saute gently until soft, in a huge pan. Add a pack (400g?) of chopped cooking bacon (75p at Asda!) and cook in same pan. Stir in 1 tbsp flour and cook 1 min more, stiring all the time.
Remove pan fron heat.
Add a little milk (3tbsp?) and stir until the mixture is loosened but not runny. Stir in chunks of turkey (maybe 2lb came off ours?). Add in 1 large or 2 small carton creme fraiche. Throw in any leftover cream lurking in the fridge. Stir until you have a thick creamy coating on all the meat. Add a little extra milk if needed to bring it to the consistency you like. Grind over black pepper and stir in to taste.
Leave mixture to cool if you plan to freeze these or cook at a later time.
Transfer filling to as many ovenproof dishes as it fills and top with shop bought puff pastry.
Cook in medium hot oven for 30 mins or so. :T0 -
If its anything like the nasty sawdust textured string meat that came from a turkey I cooked many years ago, don't bother. Just chuck it and be freeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeee0

hmm, my turkey was unusually dry this year too. Wonder if we all got our turkey's from the same place? Anyway, I used all the leftover turkey into curry's. Go down well with the kids that have left home.0
