For turkey soup, I usually make the stock first with a halved onion (including some of the skin as it gives it a really good colour), halved carrot, bayleaf, 3 or 4 black peppercorns and a halved stick of celery. When I make the soup, I decide what veg is going in it. I usually use celery, carrot, potato, depends what's needing to be used as well as frozen peas or any leftover cooked peas from Christmas lunch. I chop it all quite small then start it off in a big pan with a bit of olive oil then add the turkey stock, which should be much richer than chicken, and any small scraps of turkey meat you want to put in along with whatever herbs you fancy. Bring to boil & simmer until potatoes & any hard root veg such as swede, is soft. Taste the liquid at some point and season to taste. I sometimes put worcester sauce in at this point, a bit of soy or whatever I think it needs. Then I put about half to two thirds of it in a blender & liquidise before adding it back to the chunky half. It freezes well. I can't given an exact recipe as it's different every time depending on what ingredients I use, but this is the method I always use. My Nan used to put dried soup mix in hers but I prefer to thicken it by blending half & using potato. x2025's challenges: 1) To fill our 10 Savings Pots to their healthiest level ever
