    4 oz sugar
    50ml white wine vinegar
1/2 small carrot, very finely diced
chilli, finely diced (deseed if you don;t like it too fiery)
    2 tbsp water

Put everything into a small pan, heat gently until sugar has dissolved. Boil rapidly for one minute, be careful as sugar will be very hot! Remove form heat and leave to cool. It will thicken slightly as it cools.

I prefer to use red birds eye chillis as I like the heat but you can use whatever you have available.

  • If you want to make a large amount of the type sold for dipping Tacos in then empty a pack of cheap passata into wide pan,add finely chopped sweet peppers and finely diced onion, dash of sweet vinegar (rice is best) season with salt and add some sugar, simmer down to a nice thickness and adjust hotness with tabasco.

For a 500ml pack of passata I would use 1 large pepper, half a medium onion, salt to taste and about 2 tablespoons sugar, tablespoon vinegar, if you make it to hot add some ketchup and simmer again. It looks and tastes just like the expensive store bought ones. Obviously you can thicken the sauce up with cornflour or roux but I think it makes it a bit too "smooth".
The quicker you fall behind, the longer you have to catch up...
  • Being skint this year I thought that I'd make my family some jars of sweet chilli sauce as presents. I have a recipe that consists of just chillis, sugar, vinegar and water, and lots of tight-lidded jam jars- I'm just wondering if I were to make it now would it keep OK for Christmas in the fridge?

    Thanks.

i would of thought that as the recipe contains both vinegar and sugar which are both preservatives it would have a very long "date" on it. think of pickled eggs and jam;)
proper prior planning prevents !!!!!! poor performance! :p
