    yeah i`d be interested in the recipe too as oh gets through loads of it squirted on every meal:rolleyes: and at £1 something a bottle it mounts up

  • What type of chilli sauce? A sweet chilli dip or a chilli sauce for adding to food or one for chips?

  • Sorry, just after I put the message up I was called away! I want a recipe for a hot sauce to eat with spaghetti or pizza - something like that.

    Any suggestions welcome.
  • I just make up a basic tomato sauce using 1 diced onion, garlic, tin tomatoes chopped, tomato puree, oregano (or basil or italian herb mix), dash veggie Worc sauce, salt & pepper, then add chilli to taste(chopped, flakes, powder, whatever you have).
    If am lazy bung the whole lot in microwave and bung on for about 10/15 mins. Otherwise saute onion in olive oil until soft, add garlic, then throw in everything else, bring to simmering point, put lid on, and simmer about 20-30 mins.

    If you prefer a smooth sauce, either blitz in food processor or with hand blender. You can use normal Worcestshire sauce (I am vegetarian), or omit altogether. Also sometimes I bung in a splash of red wine if have a bottle open.

    Easy to make in large quantities and freeze in portions. Also for pizza, you might want to reduce the sauce a bit.
  • Thank you very much for that. I am looking for a recipe to replace my bottled type of sauces - like Encona hot pepper sauce. I already make my own ketchup - I don't like the gloopy consistency of shop bought sauces and I always feel that I can make things better.

    Thanks anyway - I will have to try experimenting.

    I can't find my favourite spicy cookbook at the moment, seens to have vanished off the face of the earth..........aaargh!

    Anyway, suppose you could do the above tomato sauce blitzed up, and add few tablespoons honey or sugar to the mix, possibly honey would be best.

    Another one that I have used for glazing meat, but could be used as a dipping sauce is......
    water, sugar, lemon or lime juice, seeded chopped chillies and some chopped mint. I just sort of make it up tasting as I go along. Dissolve water in pan with sugar and lime/lemon juice, bring to boil, simmering for a few mins until mixture thickens up a bit, add chillies. Allow to cool, add chopped mint and blitz in food processor. (I use about 1/2 pint water, 4 tablespoons sugar.....roughly).

    Sorry undercoat11, am sure that I do have a recipe which involves white wine vinegar & mustard with garlic and chilli.........but goodness knows if anything else in there, been a while since I made it.
