Recipe for fudge

  • I made fudge last night. A very simple recipe:

    1 lb sugar
    2 oz butter
    4 tbs water

    Gently heat until sugar dissolved

    add 1 can condensed milk
    gently boil about 30 mins until golden brown. Keep stirring. Or use sugar thermometer to 240 or somewhere between softball and hardball. Then beat and beat. When cooler and firm and coming away from the pan, pour onto some baking parchment. I put another piece on the top and squash it down. Cut when cooler

    I added some vanilla extract when beating

    The fudge is yummy and it made loads. It isn`t anything like the plastic stuff sold in supermarkets

    Why did my fudge go soft so quickly after it came out of the fridge??What did i do wrong

    I'm making various kinds of hampers for Christmas and I know some people would love some fudge so I've been experimenting making some different types (tough job but someone's gotta do it!;) )

    If I could even find the recipes on the site (somewhere in that enormous Christmas thread????:eek: ) I would try and do a link.....but firstly a thank-you to Kiwi-chick as I've tried her recipe for Russian fudge and it was delicious.

    The one I tried yesterday was a chocolate fudge (thank-you to whoever originally posted it, I can't find it now!). I thought I would put it in below as I recently saw a fudge disaster thread - this particular recipe does NOT require the boiling for 15 mins/testing in water/sugar thermometer. It was so ridiculously easy it took me 20 mins to do:

    -line a greased tin with greaseproof paper

    -gently melt in a pan: 225g plain choc, 50g cream cheese, 25g butter, 50ml milk, half tsp vanilla extract

    -when melted add 450g sifted icing sugar

    -stir til smooth. Stir a minute more over the heat

    -in tin, in fridge, cut when set

    Now this fudge is softer and smoother than the other kind (which I personally prefer - a bit harder, grainy texture) But hey, I'm not complaining about eating any of it!......I just can't eat any more as my teeth hurt!:rotfl:

    So, the question (if you got this far) is how long does fudge keep??? The choc recipe above says it should be stored in an airtight container in the fridge. So maybe the other kind would be better for a hamper? How far in advance could I make it??

  • Thanks for posting this - I was just wondering the same thing myself as I am planning to make some fudge (Nestle boil type recipe) for Chrimbo presents and don't know how far in advance I can make it...
  • Sorry I can't answer your question - our fudge never lasts for long! Thanks for posting the recipe above, sounds scrummy. Where would I find the recipe for Russian Fudge (it doesn't seem to be in the index)? I'm sure the hampers will be a huge success.
