Recipe for fudge

    1. Line a square(ish) dish with greaseproof paper

    Boil uncover without stirring for about 10 min or until syrup reached 116C on candy thermometer.
    Remove pan from heat. Add butter. DO not mix
    3. Cool for about 10 minutes
    4. Stir fudge with a wooden spoon for about 10 minutes or until it holds its shape . Spread in the pan . Stand at room temperature until it sets.
    5. Turn out of pan, trim edges and cut in squares.

    I made this fudge recope earlier but think i did something wrong. Everything was going well till i got to stage 4 amd after a few minutes of mixing it suddenly went solid and crumbly. I put it in the tin anyway thinking it would all come together as it cooled but now it's cold and it's still very crumbly and a bit sugary too. I don't know what went wrong :(

    Cybercow... I am very puzzled: I have burnt nougat before but fudge has always been trouble free. :confused:
    Oh well, if it is crumbly it could be used as a topping?
    (once used the crumbs from cutting fudge over porridge... not bad at all)

    Cybercow, when you say your fudge was a bit sugary do you mean the texture was a bit grainy? If so, then at a guess I'd say that the problem is around the second stage of the process. The syrup really needs to be v.v.smooth with absolutely no lumps or sugar crystals in it. You can test it by taking out a spoonful and having a taste (with CAUTION....LET IT COOL ON THE SPOON BEFORE PUTTING TO YOUR MOUTH OTHERWISE YOU'LL BURN YOUR TONGUE (like what I did, ahem)!!!).

    Mind you I am no expert....have only made the stuff three times, and one attempt had to be thrown away. Persevere, it's worth it!

    Mine was like that but I put it in the fridge for a couple of hours. It was still soft but had the consistency more like fudge.;)

    I don't know if this will help, but I've just watched Ready Steady Cook and James Martin was cooking down some pre-made fudge and mentioned something about adding a touch of cornflour if it started to split, so I wonder if you might be able to do the same and "rescue" your batch?

    I also wonder if you added enough butter to give that smooth caramel texture before turning out as you said it went solid very quickly :confused:

    You do realise I am totally besotted by this guy and want his babies!!! :drool: :D ... ok, maybe that's going a bit too far as I don't want anymore brats myself ;)

    But, you could mention he has an avid fan who would marry him tomorrow on your boards :whistle: :dance:


    Edit: and .... I even voted to keep him in Strictly Come Dancing last week just so I could continue to :drool: over him on tv, and I never normally call those lines (but they were contributing some of the cost to Children In Need too ;) )
