I just made some fudge (and my Christmas cake is in the oven). Think mine has the opposite problem. It set to a solid state very quickly and has come out of the tray as a rock hard firsbee!! The spoon i used to stir it with is covered in a solid layer of it-my only saviour at the moment is that the dregs that have set at the bottom of the pan have set and are flaking off nice and easily and tastes delish!!! Cant wait for the frisbee to cool so i can try it, although not sure whether i will need to get the toffee hammer out yet!

I feel like I've set you all off on the wrong path as none of my fudge recipes seem to work
They are the same as I made as a kid though so dont know why. I'll give a go myself now and see if the same happens.

brill Thread. Used to spend lots of my youth making toffee and fudge.
Has anyone here progressed on to HONEYCOMB.
I tried it a couple of times but with limited success.
Then again I only recently learned that 'Cane' sugar and 'Beet' sugar are different.
Can they both be used for toffee/fudge equally sucessfully?
and which is the beet one and which the cane one?

Mmmm Hmmm, I love honeycomb, except in NZ we call it Hokey Pokey. I also love Coconut Ice mmmmmmmmmmmmmmmmm
Honeycomb (Hokey Pokey)
5 tbsp sugar (normal white)
2 tbsp golden syrup
1 tsp baking soda
Put sugar and golden syrup into a saucepan. Heat gently, stirring constantly until sugar dissolves.Increase the heat and bring to the boil. Boil for 2 minutes. Stiroccasionally, if necessary, to prevent burning. Remove from heat. Add baking soda. Stir quickly until mixture froths up. Pour into a buttered tin immediately. Leave until cold and hard, not in fridge! Break into pieces.
Coconut Ice
3 cups icing sugar
1/2 cupmilk
25gm butter
1/4 tsp salt
3/4 cup coconut
few drops red colouring
Put icing sugar,milk, butter and salt into a saucepan. Heat gently, stirring constantly until sugar dissolves. Bring to theboil. Do not stir. Let mixture boil until the soft ball stage. Add coconut. Remove from heat and allow to cool for 10 mins. Divide mixture in half. Add a few drops of colouring to one half and beat until it starts to thicken. Pour into a buttered tin. Beat the white portion until it starts to thicken. Spread on top of pink mix. Allow to cool and cut into squares.

Now I def remember that my recipe used Bi Carb and vinegar toactivate the bicarb.
Is bicarb the same as baking soda?

I think my problem is something to do with the length of time I let it boil or else the temperature it reaches when boiling. How did you know when it was ready to take off the heat?
I'll give Mado's basic fudge recipe a go later on, have to nip out and buy more sugar. Might get a little thingy of rum and some raisins too. I'm enjoying this, it's fun!
