I LOVE scottish tablet. One of my male relatives kept making batch after batch while I was there earlier this year. I even brought a batch back to OZ. I was heartbroken when I'd eaten it all up.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0 -

I have a good recipe, but it's in a book I 'lost' while moving house recently. when I find it again I'll post it for you0 -

Just made 3 batches of fudge for the Xmas fair.
First one...plain fudge, brilliant no problems
Second: halzelnut... stupidly added a few chooped hazelnut while cooking and the whole affair overflowed like mad (lost 30% of it and big mess...)
Third batch: Rum and Raisins. Mix the rum but not the raisins and again started to overflow (but this time, I removed some with a laddle and added it at the end!)
I can uderstand that solids bits (nuts) would change the heat distribution in the mix, but rum??????
