Recipe for fudge

From my american friend:-
Quick Nut Fudge
A list of ingredients you will need:
1 - (1-lb.) pkg. Icing Sugar (approx. 3 3/4 cups)
1/2 cup - unsweetened cocoa powder
6 tablespoons - butter or margarine
1/4 cup - milk
1 teaspoon - vanilla
1/4 teaspoon - salt
1 cup - chopped walnuts or pecans
Grease a 9x5x2-inch loaf pan; set aside.
In a heavy 3-quart saucepan, add all ingredients except nuts. Over very low heat, constantly stir mixture until well combined and smooth. Remove from heat; stir in nuts. Quickly spread into pan.
Refrigerate 2 hours or until firm. Cut into squares.
I have made this with or without nuts - any kind, substituted toasted coconut for the nuts, added 1 cup tiny marshmallows, added a tablespoon of instant espresso powder, substituted various essences for the vanilla or various liqueurs for half the milk, and etc.

I have seen this in Tescos, with the cake making items. I think it is called Marshmellow Fluff (?!!) They do strawberry and vanilla.

What is vanilla is it vanilla essence (sp?) and how much does it cost?? i seen some type of vanilla stuff in a bottle in tesco and it was a whopping £8,is that the stuff i need for my fudge,sorry if i sound a little thick.0

Dont ask me.... when I tried to make it, the recipie said to stand and stir it for about 1/2 hour sumat stupid like that and it went all funny. The only good thing that cam out of it were, when I managed to chisel it out of the pan, my OH said it tasted just like Scottish Tablet (I've never heard of that)

True vanilla seed pods cost a BOMB - so the price quoted for those is probably about right. Scottish tablet is similar to fudge, but is usually a bit firmer in consistency & is sold/served in small slabs. very tasty buttery melt-in-the-mouth stuff0 -
Re: Vanilla - proper vanilla essence can be expensive depending on the previous harvest - a very small bottle is always over £1, a decent sized bottle can vary between £6 and £12 (that I have seen).
You can also get vanilla flavouring, which does not use real vanilla but usually has quite a good flavour if you don't mind a synthetic additive. Its usually cheap, maybe abour 30p for the same sized small bottle.0
