    I would love the recipe too. I tried to make some once but it didn't work out. I love vanilla fudge.:j
  • Was in a charity shop the other day and found a whole book full of recipes for hm fudge and other edible gifts (recipes for Harrods!) Thought I would give it a go for xmas. Haven't started yet.... but I had to first buy ingredients like evaporated milk. Can post the vanilla fudge recipe if anyone is interested. But I would love to hear the fudge recipe that has already been used by Mado if at all poss?

    Fudge is delish! My absolute fave is Russian Fudge, it contains condensed milk and is scrummy. Havent made it since I was a kid. I have 2 or 3 recipes in the kitchen somewhere, will dig them out and post when OH get home.

    Thekey to making successful fudge is too make sure you boil it until it gets to the "soft ball stage". This takes longer than you expect and the best way to test is to have a glass (clear) of cold water.

    When the fudge has been boiling as long as the recipe states stir it with a wooden spoon and then hold the spoon above the glass and let the drips fall into it. Try to watch it from the side. If the drips go flat as they hit the water then its not ready. If the drips form little balls in the water then its done.

    If I make fudge with 'bits' in,I always add them at the end after it's cooled a bit.Maybe that would help.

    It's been ages since I made fudge.
    Trouble is it's so moorish.
    You need a visit to the gym for every square!(probably the dentist too!)

    Oh, I soooooo wish I hadn't read this thread.......I have evaporated milk and condensed milk in the cupboard.

    I love fudge with a passion - but then again my dentist has gone private :(

    There again...it IS nearly Xmas, so in the spirit of HM yuletide treats, I'd better practise first. After all, no point making some that isn't quite perfect, is there.

    Now, those fudge recipes - have they been posted yet?

    Right OS'ers, here goes.........................

    Chocolate Fudge

    2 cups sugar
    2 tbsp cocoa
    1/2 cup milk
    25gm butter
    1/2 tsp vanilla essence

    Put suagr and cocoa into saucepan, mix to combine.Add milk and butter. Heat gently, stirring constantly until sugar has dissolved and butter melted. Bring to the boil, do not stir. Let mixture boil until it reaches soft ball stage. Remove from heat. Add vanilla and leave to stand for 5 minutes.Beat with a wooden spoon until think. Pour into buttered tin. Mark into squares, cut when cold.

    Russian Fudge

    3 cups sugar
    1/2 cup milk
    1/2 cup condensed milk
    125gm butter
    1/8 tsp salt
    1 tbsp golden syrup

    Put sugar and milk into saucepan. Heat gently, stirring constantly until sugar dissolves. Add condensed milk, salt and golden syrup.Stir until butter hasmelted. Bring to the boil and continue boiling until it reaches soft ball stage, stirring occansionally to prevent burning. Remove from heat. Cool slightly then beat until thinck.Pour into buttered tin, mark into squares. Cut when cold. Vanilla essence or chopped nuts may be added to fudge BEFORE heating if desired.

    How much does it cost? I absolutely love fudge - it is up there with clocks, telephones, antibiotics, the internet and shortbread in Gizmo's Big List of the Most Important Inventions Ever. :T :T
