im hoping to make fudge and sweets as christmas gifts and was wondering how far in advance i can make them anybody any ideas how long they will keep. at the mo i just collecting/experimenting with recpies and saving up pretty gift boxes. oh and if nyone want to throw in how to make their fave goodies they'er more than welcometwins on board0

I hit upon the wonderful idea that I'd make fudge for christmas...so far I've made rum and raison and chocolate. Now they both taste divine...however it's really really soft. Like icing soft. Now although me and mum really don't mind eating it with a spoon (although my waistline is moaning somewhat), it'll end up a big fudgy puddle by the time my friends and family eat it.
Now I've made sure I've followed the reciepes to a 't', and it's definatly got upto 234 degrees like they said, I've let it cool to 110, then beaten it for all it's worth, til dull like they've said...and it ends up really soft. Now I know fudge is meant to be soft, but not like this lol.
Can someone point me in the right direction....I'm not sure my trousers can take many more batches going wrong:cool: Proud DFW Nerd 135 :cool:Sealed Pot Challenge - 0190 -
I have just made fudge myself,I think you need to cook it more,I dont use a thermometer just make sure its the right colour and drop a small amount in a bowl of hot water and make sure it sets ok.
Not much help really but I am sure someone more experienced will be along soon.0 -
This happens to me all the time. Scrape it back into the pan and cook for few more mins. In fact I am now resigned to having to do this with every batch of fudge I make!!!“the princess jumped from the tower & she learned that she could fly all along. she never needed those wings.”
