I have a problem with coconut ice,its sets ok but when I cut it the white and pink layers seperate,I put the white in and then add the pink asap really quickly and even press it down a little bit to get it to stick but I always get some pieces that fall apart not all of them just some.0

I had a go at making some fudge tonight. This recipe I used called for double cream and milk. I have made fudge once before with condensed milk and it turned out great. But his effort tonight was a disaster!!
It started to darken and thicken so I took it off the heat.
When I took it off the heat and tried to beat it, it just turned to a crumbly sugar consistency. Did I over cook it?

It was more than just crumbly...it was just like sugar! I was going to try just packing it in the tin to see if it would stick together at all. But after accidently chucking half of it on the floor, I gave in and binned it. I am supposed to be making some for the school Christmas fair so it's s*d's law that it wouldn't work out when I needed it too.

I think it's really difficult to make (have had quite a few disasters myself...)
The main thing is that it does change colour (I think) and then has to be on the heat at a very high temp for quite a while (looking like boiling lava), while you constantly stir. I think 10-15mins which seems like ages while you're standing there.
Some people use a sugar thermometer to see that they have the right temp for the right time.
If not have a glass of water next to the stove - drop a bit of the mix in and if it holds together as a blob then the fudge is ready.
I've seen lots of advice on this board with much better instructions and links - have a quick search and I'm sure you'll find something that works!

I'm starting to think a drew the short straw offering to make fudge. Wished I'd have picked the truffles now.

A little while ago a member from debt free wanna bee posted a simple no cooking/heating needed recipe for fudge
It contained lots of icing suger, sweetended condensed milk, choc,butter and vanilla and nothing else if I remember correctly
Ive tried looking for the recipe but cannot find it
