Bottling Cordial
I made a batch of elderberry cordial last night and the recipe told me to let it cool before bottling. It's my understanding that preserves should be bottled and sealed hot so a vacuum forms as the liquid cools in a sealed container. Can anyone shed light on this for me? Is it better to bottle when cool or hot?
