Buttermilk Question

Hi I bought some Buttermilk the other day for DH to make some scones, the recipe called for 6 tbsp but Asda only had 1 litre in the foreign foods section. I didn't check the bottle and have just seen that you are "supposed" to use it within 12 hours once opened and I have 1 1/2 pts left
It's day 3 and it smells fine (well it smells of yogurt, I guess that's how it smells) so can I freeze it for cooking later? I was planning on using it to make Soda Bread and I'd hate to waste that much Buttermilk.

It should keep in the fridge a few days. Also makes a good marinade for chicken, or OH will make American style pancakes to use up any leftovers in our house. I've not tried freezing it though.0

It will keep for a few days in the fridge, and it also freezes fine, just give it a good shake after defrosting.0

Thanks, I just wanted to make sure the 12 hours was not to be strictly adhered to
I googled freezing it and that's fine but it can separate - I'm sure that's not a big issue though. Well I have 3 1/2 pint portions so I might try some other recipes

I use buttermilk up to a week after opening, and very often after the date (which is possibly "use-by", but it's always seemed fine). Buttermilk doesn't smell great when it's fresh, it doesn't smell much different a week later! If it's lumpy or stinky then obviously it should be chucked out. I use it for making soda bread and farls, and pancakes and scones. If I was going to drink it - and it's supposed to be very good for you to drink - then I'd want it fresh, but for cooking I'm willing to leave it longer.
(Obviously, when it comes to advice on eating food past its use-by date you should use your own noggin too - I am fairly young and healthy and consider the idea that a few stray bacteria won't do me too much harm. Also I don't eat anything that looks or smells like it is likely to make me ill.)
