Low cost meat based diet help needed!

So I have autoimmune disorders and have been eating an autoimmune protocol diet for a few months now and it's really helped - I've cut down my medication and am finally out of the totally exhausted all the time constantly ill phase I was in. So my diet is basically meat and veg based with some fruit and sweet potatoes. I have allergies to potatoes, tomatoes, onions, peppers, citrus fruits, bananas and am gluten and cow's milk intolerant so all my food is made from scratch.

I need help with meat and veg based suggestions for cheaper meals, at the moment I have a coconut milk and fruit smoothie or a homemade turkey/beef burger for breakfast, with the occasional omelette (I can tolerate some eggs and cheese). Then for lunch usually pork chop/turkey breast and more veg and the same for dinner. I have a slow cooker and food processor and am quite a good cook. I wanted to try more organ meats and am starting with kidney so any suggestions for a kidney stew would be great - I have to make my own stock from bones!

I want to liven things up a bit by making some sauces/stews/soups - any suggestions would be gratefully received especially using cheaper cuts of meat. I already follow all the pale/autoimmune blogs and have got some new recipes but they all seem to use complicated ingredients I can't get in Tesco/Asda/Lidl

    Hi Skint_Chick. I am in a very similar position to you although my gut does seem to be healing and I can tolerate a wider range of foods than I once could.

    I bung as much veg as I possibly can into meals and then add some dripping, salt and pepper to them before serving. There always seems to be plenty of it coming off cheap cuts of meat.

    Kidney wise, I'm not sure if I'm doing the right thing but someone will let us know. I generally buy them whoopsied and freeze them. I cut them up when they are still semi frozen as they are easier to handle that way. What I can't do that way is cut out the core but I don't know if the supermarket prepares them for us before packaging IYSWIM. They then get cooked in the slow cooker with stewing steak and plenty of veggies.

    Coconut oil also helps a lot. Coffee doesn't like me anymore so I mix coconut oil, nut butter, a little honey and cocoa powder. Heat in the microwave until melted then pour into little pots. Good as a snack at any time.
