Why not try the easycook magazine for ideas. The new one came out yesterday available in Sainsbury, Tesco and WH Smith.

I think £1.50 is plenty to play with.
What about throw in the oven some cheap meat like value brand chicken drumsticks/wings, roast some potatoes with it, and steam some greens like cabbage, cauli, or leeks?
Or cheaper fish like cod, with steamed potatoes & veg.
You could buy a small chicken for under £3 (I reckon the Co-op does the best, and probably kindest, cheap chickens) and eat over 3 days.
To me, £1.50 does not have to mean sardines/beans/lentils0 -

Haven't posted for a while, but i was wondering if any of you had any suggestions for cheap and healthy meals, i am currently a single parent on benefits, i had to leave my job as i have quite bad depression, but i am getting help for that and hope to get back to work soon, the problem is i am used to buying all the healthy organic stuff and it seems a lot easier and cheaper to buy the processed crap, for want of a better word, it simply is not easy being healthy on a budget, i have one recipie which is a tomato sauce with lots of veggie that i can batch cook and used for bolognase or with couscous and mozzerella, but i am sturggling to come up with any ideas? Any regulars that you guys produce? x0 -
meatless shepherds pie
1 onion
1 or 2 garlic glove
butternut squash peeled and deseeded (could use carrots, cheaper)
vegetable stock 350ml
can kidney beans
can butter beans
can haricot beans
1 red pepper
tin tomatoes
herbs
salt and pepper
optional courgettes, celery etc
potatoes
Boil potatoes. drain and rinse beans.
fry onion and garlic for 5 mins. add stock squash, peppers, (other veg is if using) and cook for about 10 mins
add beans. When hot put in casserole dish. mash potatoes and put on top. optional add grated cheese on top. Put in oven gas mark 6/200oC for about 15 minutes.
It makes about 6 big portions.Wendy0 -
I've been buying butternut squash from aldi for 89p and making roasted wedges from it. Drizzle with olive oil, sprinkle of dried rosemary and bung in oven for 30 mins, then add balsamic for last 10-15 mins. very nice and nutritious.
I serve this with a side plate of veggie chilli. Basically sweat an onion, add a chopped clove of garlic, add chilli powder and cayenne pepper and whatever cheap veg you have managed to find that day (I had 30p mushrooms from tesco and a bag of assorted chopped veg I found in the bargain bucket). Then add whatever cooked beans you have ( I had dried adzuki beans and black beans i had soaked overnight and then cooked in the morning, both bags of beans had been on special offer, and a 19p can of kidney beans). Mix beans and spices and add a couple of tins of value tomatoes. I add some gravy as well (suitable for vegetarians Bisto) to give it a meaty edge, or add a spoonful of marmite of a square of dark chocolate. Top up the spices if necessary and add a squirt of tomato puree or ketchup. Leave to bubble away until it tastes done.
This makes masses - enough for lunch for two and a further 4-5 meals for two you can put in the freezer. I found some pasta sauce-style containers in poundstretchers 10 for a pound that are good for this storage purpose, and estimated that per portion I had spent 20p.
The same method can be used to make veggie shepherds pie, just leave out the spices and use worcestershire sauce and a bit extra gravy for flavouring.
Since I started trying to live frugally I've found the best thing is having loads of dried beans/pulses - they go such a long way for such a small expense. Potatoes - many many dishes can be based on or added to/bulked up with. Making own pasta sauces at a fraction of the price of the supermarkets.
