    can potatoes be peeled and sliced into chips then kept fresh (frozen?) for a few days before being cooked? It'd be nice if I could do that over the weekend and then cook some during the week if I fancy them but am too tired/not bothered to peel and slice potatoes!

    You could just scrub some large potatoes and bake them in the microwave - then put them in the fridge - when you want chips just cut into wedges and spray with oil and put in oven.

    I never peel veg unless the skin is damaged. It only takes a few minutes to give them a scrub with a veggie brush and slice them, so I just make them as and when.

    Me too!!! ... I just washed and chipped them with their skins on ... think of the extra fibre ;) I made some last night with Desiree spuds and they were even nicer :)

    I don't bother peeling carrots either, unless the skin is really rough, as I was once told that all the vitamins accumulate in the layer just under the skin, although I don't know if that's just an old wives tale or not :o

    I just thought I would report how things are going. It has been 2 weeks since I started the healthy eating and although DS2 isn't eating an awful lot more, he is trying things.

    But the main difference, and to be honest I can't believe it, is my DS1s behaviour. He was always a terribly loud and hyper child and since watching the Jamie Oliver programme decided to cut out junk completely and the fizzy pops, he is a different child. Our house is a completely different place to what it has been. I usually had to scream and shout at the boys to get them to do something, now my eldest listens and isn't agressive anymore.

    We have stopped having cordials and fizzy pops and now only have milk, water or pure fruit juice to drink and everything I cook is fresh - not convenience.

    Trying to do the healthy eating thing I'm serving more chicken than red meat. Tonight I put garlic, tinned tomatoes, tbsp pesto and some extra garlic in a bowl added chicken breasts and cooked in oven. Cooked oven chips to go with it and served it with HM (ooh I'm so with-it!) herby bread.

    It was delicious! Four clean plates and by my reckoning quite a healthy meal. Fruit for pud :D

    whats the best way to lose weight old style,i have been going to rosemary conley but i find it bumps my shopping bill up and am eating a lot of junk food.my old neighbour next door seems to think its excersise that counts more than eating.she said if we walked everwhere instead of getting in the car the weight would drop of.but i have to confess i hate walking.she said years ago people ate more fat ie bread and dripping and lots of jam and pastry but they burnt if of because they were more physical.
