    The beauty about homemade stock is you can allow it to cool and remove the solid fat.
    The worst thing I've notice for fat coming out is those really cheap intensively farmed chickens, simply dripping with fat. But most people would still see chicken as a low fat "healthy" food.

    I would take off what I could and not worry about the rest, latest research suggests that our diets are much more complex than the old "fat" bad message we have been given for years. In fact many recent studies suggest some overprocessed so called "low fat" spreads are more of a threat to health than good old pure butter.

    The big issue is trans fats which are really dangerous and still get stuck in many processed foods. In Denmark after banning transfats (despite most people's diets being just as fatty overall) within just over a year obesity levels had reduced by around 30%.

    What I always take from all this is to try to cook as much as possible from scratch, eat as little processed food as possible and enjoy what you eat.

    I'd syuggest that if you skim the fat from the stock (even easier once it's gellified ;) ) there'll be less fat in the stock than in the ham :D

    Having said that, we need fat in a healthy diet - so who am I to judge if your stock is "healty" :p

    As this has fallen from the front page of OS, I'll add it to the healthy eating thread.
