Healthy Sausages

My 8 year old son made these following a recipe he got from Planet Cook on CBBC. They were really tasty and very filling. Will definitely be making them again.

1 large eating apple
1lb pork mince
1 thick crust of bread made into breadcrumbs
5cm root ginger (or we used 1tsp dried ginger)
1 tsp mixed herbs
1 egg, beaten
1 small onion, chopped
8fl oz apple juice
1 tbsp olive oil

Peel and core a large eating apple and grate it into a bowl. Add the breadcrumbs, pork, ginger and herbs and stir together.

Add the beaten egg so the mixture sticks together. Shape into sausage shapes.

Add the olive oil to a frying pan and heat on high. Fry the sausages for a couple of minutes till the outsides are browned.

Remove the sausages and fry the onion till it's soft.

Add the apple juice to the pan, then put the sausages back in.

Bring to the boil, then turn down the heat and allow to simmer for 15-20 mins, or until sausages are cooked.

Put the sausages on a plate, and pour over the remaining apple sauce in the pan.

    Pre O/S: what's a vitamin? Does it begin with the letter e?Now: I'm not eating any of that pre-made rubbish...

    He made 8 very fat ones!

    You could probably get 12-16 regular sized sausages depending on how thick you like them.

    That sounds great with some nice mashed potatoes Becs. I like the ones where you mash spring onions or sprouts in with the mash. Good way to get them to eat veg too. I nice change from those Pukka pies!

    Made these tonight Becs with parsnip and potato mash and a glass of Sauvignon Blanc; delicious, but mine didn't hold together as well as I'd have liked.

    I still have about 30 large cooking apples saved from last autumn and so I've been looking for something different to do with them - thanks. (The keep beautifully till mid March then seem to go bad over night - happens every year.)

    Some butchers sell sausage skins so you can do them proper sausagey:)
    As for the cooking apples chuck us a few - i love baked apples;)

    They're probably lovely but what's the other 3%? Salt, preservatives, offal etc etc? In a pound of sausages that's still half an ounce of additives of some description and if it's salt that's quite a lot.

    I made these sausages last week. The pork mince was minced by the butcher in front of my husband from a pork joint - he even cut the fat off first. Add the apple, herbs, bread (which was homemade), egg etc and the sausages are lovely. Might not be 97% pork but at least I know exactly what the other 3% is.

    My only complaint with this recipe is that the 'sausages' tended to break up and you had to be gentle. Next time I make them (and there will be a next time) I shall probably make burger or ball shapes instead. :D
