for me has been taking a portion out of the evening meal for me and the kids for the next days lunch (or putting it in freezer for a couple of days time).
This works really well with anything really - lasagne, shepherds pie etc....and as you are only cooking once you are not messing the kitchen up again at lunch time (which I always begrudge when I have 3 kids to look after and get to have naps etc)
If I don't follow this approach it's usually something in a pitta or jacket potato as it is quick, easy, cheap and nutritious.

Wow, just stumbled upon this. Many of the ideas are specifically American (with food not available here), old fashioned or not healthy. But even if you only like half of it, lots of ideas! This woman is organized!

Hi all!
I am looking for lunchbox ideas for myself. The problem: I work alternate weeks of early and late shifts, dont have access to refridgeration, and am not fond of sandwiches everyday. I have a thermos, and that is great for soups, but now that the weather is warming up.....
I am also trying ot lose weight, and dont' like processed, ready meal-type foods excpet for pccasionally frm M+S (figures).
I take a fruit,nut + seed mix, a bag of chopped up raw veg and usually a piece of fruit ( with a bottle of water/flask of tea. WHat else can I add to this at about 75p a serving?? Not a fussy eater by any stretch, but without a fridge.....0 -

How about pasta/rice salads? I chop peppers, cucumber, celery, anything in the fridge really and add ham/cheese/tuna. I use some of those frozen cool box/gel thingies to keep lunchbox contents cool (sorry having one of those can't think of the word moments
). Plain salad also an option.

I recently rejuvinated the sandwich option because I got a free hedgehog loaf from Asda and i am now addicted to fresh bread, they taste far nicer and i'm hooked on cheese and pickle again!
I buy a loaf (Greggs) cut it and freeze it straight away- make the sandwich while the bread is still frozen and the fresh bread tempts me from my bag on my desk each morning

Treat yourself to an individual cool bag and then your choices are fairly limitless.
Rice salads - rice cooked with chinese five spice (or any other spice you have) in the water, once cooled add peppers, raw mushrooms, tomatoes, handful of cooked peas, red onion, anything you like really and throw in some ham for protein.
Pasta salads, cooked pasta, mayo, tuna, sweetcorn, tomatoes, peppers, onions. Alternate tuna with prawns, salmon, ham
Couscous salads, cooked with roasted veg stirred through.
Indian Selection - Bombay pittas, bombay potato stuffed into a pitta, serve with chicken tikka drumsticks or samosas and some salad.
Ham & egg potato salad - New potatoes, chopped mixed with mayo, red onion, hard boiled egg and some ham
HM quiche, I have a recipe that a friend gave me that does not use pastry so is very low fat. I would post it but it is a Slimming World one, so not sure whether it is copyrighted. Perhaps you know someone who knows it.
HM Pizza - choose the topping so that it is nice cold.
Crispbreads, rice cakes, oat cakes with low fat pates, low fat soft cheese (different flavours)

I've been looking for a coolbag, but haven't found on to fit in my equipment bag yet! It already weighs 25 lb. (over 2 cases) so carrying a 3rd item isn't easy. I have copied your suggestions, tho! Keep them coming!!0
