I have never bought a tin of coconut milk, I always make it up from creamed coconut with boiling water. The creamed coconut seems to keep just as well after its opened so never have any left over as such.
Is there any advantage to the tins of coconut milk (apart from not having to stir a lot to mix the creamed coconut with water!) i.e. is there a difference between what you buy in tins and what you make with creamed coconut?:shhh: There's somewhere you can go and get books to read... for free!

I've used both coconut cream & tinned coconut milk in the past, but now I always use coconut milk powder (available from Halal shops, Chinese food shops & some supermarkets)
it's really handy, you only use the amount you need & the rest will keep in the cupboard for a long time. the biggest disadvantage is that it's so delicious & I usually end up eating half of it spooned straight out of the pack0 -

My first thread started on this board.
I went to Aldi last week and bought a few cans of coconut milk as they seemed a bargain.
I fancied making a coconut rice pudding in the slow cooker, but am struggling to find a recipe that is simple to make. I don't do bananas but would have anything else in it.
Is there anything else I can do with it? I am veggie and dh does not like coconut.

I often add coconut milk when i'm making a curry. E.g.
After frying onions/garlic herbs, add lentils/stock/rice and veggies and then add coconut milk.
Cook for about 30 mins.0 -
Yeah Thai style curry mmmmmm!
I eat meat & fish so my fave is monkfish in green curry but I am sure it would be good with a veggie style curry too.0 -
