If you are going to use very small amounts I would suggest you freeze it in equally small amounts (ice cube trays...). Make sure you shake it well before distribution as it is clearly an emulsion (you could end up with a watery part and an oily part otherwise).0

I've done this with reduced fat coconut milk and it comes out fine.

We love coconut milk and add it to loads of curry type dishes. Last night's tea was minced beef fried off with some mushrooms in plenty of Pataks Tikka Masala paste, a tin of toms, a tin of lentils, and a tin of coconut milk all bubbled away until the sauce thickened and everything else was fully cooked. Tasted lush.
You can also use it to make rice pudding.
Thai style soups - add fish and thai seasonings (corriander / lemongrass etc) and coconut milk.

You could freeze it, but I think that it would separate on thawing, as it has a high fat content.
I have used it to make a rice pudding extra tasty, but you could cook chicken fillets in it, or make it up as ice cream.

I fried off some garlic and onions the other day, threw some chicken in and added coconut milk with soy sauce to make a sauceComping, Clicking & Saving for Change0

fish curry
2 tblsp of oil
1 tblsp cumin seeds
infuse for 2 mins
1 chopped med onion
1 tsp chilli powder
1 tsp turmeric powder
2 tsp fresh green chillies
1 tsp salt
1/2 lime juice
splash of fish sauce
cook for 2 mins
add 1 can coconut milk
simmer until hot
15 mins before you are ready to eat
add fish (cod/monkfish) large chucks so it doesnt break up
cook for 15 min

My aunt use to use it in jelly (half water, half coconut milk) - particularly lime.
