    Makes lovely pina coladas :D Pour 1 part white rum into a blender, add 3 parts coconut milk, fill nearly to the top with ice and whizz. An adult slush puppy - yum!

    Hi all,
    Did do a search but nothing came up.

    I have 1/2 tin of coconut milk left after making korma sauce. Cant think of anything else to do with it!
    I have decided that I waste to much food by using what I need and then throwing the rest away, will not any more.

    I am sure others have said that you can freeze it.

    Otherwise, make a coconut rice pudding - delicious. You need a full tin, but you could always just make a half portion.

    Yeah you an freeze it, handy with things like that if you freeze in icecube trays, or small pots, then can pop out as you need it or put all the cubes into a bag once frozen. Saves defrosting too much and wasting..
    One day I might be more organised...........:confused:

    Hi,
    you can make a coconut flan. Make an ordinary caramel or vanilla pudding replacing part of the milk with coconut milk.
    I buy powdered coconut milk which is easier to measure and store and probably also cheaper, when a bag is opened I keep it in a jar.
