    Thanks I never thought of freezing it, but with so many great new ideas its not gonna get near the freezer!! infact might go and buy some more :o)

    Thanksyou V.Lucky & Lil-me, I never knew you could freeze this; I love it in curries but it's so rich i only used half a can & never knew what to do with the rest, I do now! by the way, how do you make "coconut pudding" please? it sounds yummy

    Ive got 3 sachets of coconut milk in my cupboard, i bought it to make chicken korma with but didnt like it:o (the homemade korma that is!! Hate to say it but takeaway is much nicer) and havent a clue what to do with the other 3 sachets, does anyone have any suggestions?

    I will eat/try most things but the only problem I have is Im allergic to cinnamon

    Im not fussed whether its used for sweet or savoury dishes but I dont want to bin them

    ps I have seen the bounty pudding/rice pudding recipe and thats already on the maybe list so that just leaves the 2 sachets ;)

    This recipe from Delia (coconut lime cake) uses coconut milk powder and it looks yummy :)

    You can cook rice in coconut milk to make coconut rice.

    I dont like HM korma either but make a nice mild curry with veggies of just coconut milk a bit of curry powder and some garam masala. I add tomatoes to mine too and its really lovely.

    You can also cook black eyed beans in coconut milk, apparently tastes lovely.
