Thank you v much...guess what I will be doing later ;-) so glad we keep arborio rice as a 'staple' now, even though no one else likes risotto! xI have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off

I was looking earlier too as found a box of out of date sachets to use in the cupboard.
Coconut rice pudding sounds delicious!0 -
I made chicken korma for dinner, the first time I've made a proper korma from scratch, and in this endeavour I bought a tin of coconut milk from the asian supermarket. It did actually say coconut milk on the tin as well!
When I opened it earlier, it wasn't at all what I expected - it was really thick, more the texture of double cream, rather than the pouring consistency of milk that I thought it would be. In fact it looked (and smelt) like sun cream!
It worked well in the curry, but I was wondering if it is normal for it to be so thick, is it because it was an asian supplier and they use it thick for cooking with?
(and if anyone had any ideas for using up the other half of the can that would be handy too!)

Hi Silaqui,
Well done on making your first korma from scratch. :T What you have sounds like normal tinned coconut milk to me, and if it was labelled as coconut milk and tasted good in your korma, I doubt if there is anything to worry about.
You can freeze the remaining coconut milk for using another time, there's advice on this thread:
Can i freeze coconut milk?
or you'll find lots of ideas for using it in this thread:
Coconut milk
I'll add your thread to that one later to keep the suggestions together.

I'm making a curry tonight from scratch (i usually buy jars...i know it's shocking for me as i make most things scratch)...anyway i have half a can of coconut milk left and i don't know what to do with it. I've just read it doesn't freeze very well, so what else can i make with it?
Any ideas would be very welcome as i hate to throw anything away and i don't really want to make another curry tomorrow (though net time i'll make a double curry and freeze half)0 -

It freezes fine; it may separate, but just stir ir then cook with it
I think you can add it to rice pudding, if that appeals.:rudolf: Sheep, pigs, hens and bees on our Teesdale smallholding :rudolf:0 -
