    Coconut ice cream? You could use it instead of the double cream?

    Use it instead of milk in rice pudding, that is YUM!

    Asians have traditional sweet bean puddings you can have with coconut milk but I think the idea of sweet beans puts a lot of people off :)

    I knew there was a thread somewhere on coconut milk so I've done a search. Here it is hope it helps. I've got 2 tins of it sitting in the cupboard so must really try something with them soon :rotfl:

    The coconut ice cream sounds amazing, and would certainly boost my reputation as a culinary genius. OTOH, the coconut milk and mango smoothie is nice and easy, and also doesn't leave me with any leftover ingredients.

    PS. I have found another recipe for coconut ice cream, involving a tin of coconut milk and a tin of condensed milk. Just mix and then freeze, either in an ice cream maker or using the freezer method above.

    Makes lovely pina coladas :D Pour 1 part white rum into a blender, add 3 parts coconut milk, fill nearly to the top with ice and whizz. An adult slush puppy - yum!

    The official International Bartenders Association mix for pina colada is 1 part white rum, 1 part coconut milk and 3 parts pineapple juice.

    We are having a very untraditional Sunday dinner - chicken curry! I have opened a tin or reduced fat coconut milk, only used a tiny amount, and read on the tin it needs to be used within two days. Not sure if I can freeze it in two portions, any other suggestions of what I can do with it please - apart from making more curry of course...

    I guess I could make curry sauce and freeze that. Anything else?
    I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o

    I *think* you could freeze the coconut milk, perhaps in ice cube trays so you can use a little at a time as needed.

    There are also a number of pudding recipes that use coconut milk - a quick search should turn up some - I haven't tried any myself as we usually just use a whole tin of the stuff so don't have leftovers to experiment with. We usually make thai style curries with it, very yummy!

    I did the same think a while ago, and used mine to make a smoothie! You could also use it to make a coconut rice pudding, or how about using it to make some muffins! Banana or chocolate ones with coconut sound good!:)
