    rice pudding made with coconut milk is yummy! Not strongly flavoured but very creamy.

    I often put coconut milk in home made soup, especially when cooking for a friend who is vegan, as it makes it nice & creamy without adding any dairy.

    It makes a great substitute for milk in muffins or banana bread recipes or even add to mango and use in a smoothie.

    I freeze it all the time and never had any probs in fact I but it in 2 l cartons as its the only brand I can find with no stablizers in and freeze in half cup portions

  • I used a tin that had been lurking in my cupboard yesterday making Jamie Olivers Spicy Parsnip Soup.
    Can't do links but was only onions, garlic, garam masala and parsnips.
    Then veg stock and coconut milk.
