I have just made some rice using 100ml of coconut milk from the morrisons magazine and now have 300mls of a can left.

Freeze it for next time. I made coconut rice the other day and wondered what to do with the extra milk so googled it and loads of people say it is ok to freeze.Haters are gonna hate - you're not obliged to participate0

Thai green curry is an idea, not something I would like but dh would love i shall look up a recipe.
I never knew you could freeze it! This could have saved me a fortune if I'd have known a few years back!

Freeze it, chuck it in a rice pudding, mix it with pineapple juice and freeze it as lollies (yum), make coconut rice, or a thai red or green curry.0

You can actually add it to any curry.0

You can often buy coconut milk in smaller cans from Thai or Chinese supermarkets if you have one near you. It's usually cheaper too.0

I've taken to buying coconut milk powder these days and make up as much as I need to save having to work out what to do with the rest of the can. (Freezer is full enough as it is - anything that keeps in the cupboard gets extra brownie points in my shopping list!) I get it in the world foods sections of whichever main supermarket I happen to be shopping in this week- don't know if they all stock it but I've never had a problem picking it up.0

Curry sounds incredible right now! I saw a recipe for fudge that called for coconut milk and it sounded so amazing. I will have to try it and let you know how it is. I hate thinking about food though, it always gets me in trouble.0

There is no Asian supermarkets near me, there used to be a really big Chinese one which I did use a lot but that went about a year ago and to my knowledge there is no more.
I never knew you could buy it in powder form will look out for that.
I've heard if these mystical smaller cans.... But never come across one!
The cheapest i can get the coconut milk (without making a trip into town with a £3bus fare) is £1.09 so to only use so little is very frustrating.
