I have half a tin of coconut milk left after making C_Q's Chicken Korma and since I've had two curries now already this week I was wondering what else I could do with the rest.
Does anyone have a favourite pud that uses it, please?
Or can I just freeze it ready for next time?

Ahhhh here we go finally tracked down the recipe. I must be totally brain-dead today as it took me a while to even remember what it was I was supposed to be making or where I'd put the recipe :doh:
Not sure if you're a lover of ice-cream or anything but I'll give you the recipe anyway
Coconut Ice-cream
1 cup double cream
1/2 cup milk
1/2 cup coconut flakes (dessicated)
8oz can of sweetened coconut cream
Take the milk and coconut cream and blend in a food processor. When smooth, carefully stir in the cream and coconut flakes. Transfer the complete mixture into an ice cream maker and follow the manufacturer's instructions - or - transfer to shallow freezer box and put in freezer. When it begins to freeze around the edges take it out and whip it up, then put back in freezer and repeat again a couple of hours later.
Dead easy to make even if you don't have an ice-cream machine (I don't ... yet!) and you can halve those quantities and adjust it to however much coconut cream you have left!
Oh, and I was going to serve it with an apple, mango and banana crumble :drool:

Darn! My freezer is packed to the gunnels - got space for half a can (decanted into something smaller) but nowhere to lie a tray level. I'll certainly remember the ice cream though.
Rice pud in the slow cooker looks like the way to go. Gosh - never thought of coconut rice before, this should be interesting

I have a friend that uses it to make porridge with too. Just substitute coconut milk in place of ordinary.I'd rather be a could-be if I cannot be an are; because a could-be is a maybe who is reaching for a star. Or when making a cheesecake or custard tart, substitute half the evaporated/condensed/cow's milk (whichever your recipe calls for) for coconut milk. Especially nice in chocolate cheescake.
I've just remembered that my aunt used to use this when making up lime jelly but I don't remember the ratio of milk to water.0 -

Oh, and shurrup about your summer... cos ours is just ending! ... not that I mind too much as I hate the heat anyway, but I hate the miserable dark mornings in winter even more
