Coconut milk

I froze coconut milk recently and it was fine when I defrosted it and used it in curry.

You can get dried coconut milk- I bought some in a Thai supermarket in Manchester and plan to use it instead of the tinned in future.They also had some small tins which I haven't seen in Tescos.

Yes, while I was wiping the drool off the keyboard at the thought of coconut rice pudding I remembered that I also froze half a can of the reduced fat coconut milk after using the other half in a curry. It thawed just fine and I bunged it into another curry, also fine.

But I'm really, really craving that rice pudding now.......

now I am hungry - I LOVE coconut. In fact the chinese supermarket over the road is open till 6pm.....................................:D

I've had a quick search and have discovered you can make coconut ice cream with left over coconut milk, but can I freeze it on it's own?

On a diet and my recipe only uses a couple of tablespoons and I don't want to make anything else with the rest because of said diet!

I'm sure this will be fine - regular milk freezes no problem. As coconut milk is non dairy then it will be similar to freezing a juice or water which both do very well.
