    Hi sunshine,

There's an earlier thread with some ideas that should help so I've added your post to it to keep the suggestions together.

    Hi

I have several tins of coconut milk in my cupboard that are getting in hubbys way. He keeps threatening to throw them away but I insist I'm going to use them. Does anyone have any ideas on what I can do with them. I was thinking a cake kind of thing but never used it before.

I must use it before my husband takes them outside and buries them forever. :rotfl:

Beef Rendang - a gorgeous slow cooked beef curry from Malaysia - take a cheap cut of beef like shin (really tasty) and cook for 3-4 hours in 2 litres of coconut milk

    Coconut and Carrot Soup

3 lbs carrots OR sweet potato OR squash/pumpkin
    1 onion finely chopped
    1 tbsp curry paste
    butter/oil

Fry the onion and curry paste in the butter. Add the chopped and peeled veg.

Add about 1 litre of stock (chicken stock is good) and a tin of coconut milk. Simmer until veg are soft. Blend and season.

    TOP MONEYSAVING TIP

Make your own Pot Noodles using a flower pot, sawdust and some old shoe laces. Pour in boiling water, stir then allow to stand for two minutes before taking one mouthful, and throwing away. Just like the real thing!

My Mum won a 400ml tin of coconut milk in a raffle. It was the last prize! I now have to come up with something (not a mild curry or anything too spicy, possibly a dessert?) to do with it! It's like "Ready, Steady, Cook", but with only one ingredient. Any ideas, my fellow gastronauts?
