HM chicken tikka & salad for us tonight. It's a bit cold for salad tho; I might have to crack & put the heating on. My Mum would never have the heating on before October, so I guess I've inherited that little quirk from her!
Chicken Tikka
small piece ginger
4 cloves garlic
teaspoon of chilli flakes/powder
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon nutmeg
teaspoon mint - recipe says use fresh, but I use dried & it's fine
squeeze lemon juice
small tub of plain yoghurt
Mash the garlic & ginger in a pestle & mortar, add cumin, chilli & all other herbs/spices & mix into a paste. Mix into the yoghurt, add the lemon juice & coat your chicken pieces. Score the chicken to help it absorb the flavours more. The recipe uses fresh coriander too, but I don't like it. Marinate for a few hours & cook - grill, bake or griddle.
The amounts are a bit hit & miss, I chuck it in til it looks about right. You can use fresh chilli instead of dried. Today I put a sprinkling of garam masala in too. Live dangerously! This is enough for 3-4 chicken breasts.0 -

OS today has been cleaning (well, quick flip 'round!) and bread making (in machine), bit of washing (but had to grab it in as it started to rain). This evening we ate fish & chips (home made) and peas (frozen).0 -
