I use this recipe, which was in a sainsbury's magazine a couple of summers ago. makes enough to coat (at least!) 8 pieces of chicken

    4 tablespoons tomato ketchup
2 tablespoons marmalade (i find shredless works best here and buy the cheapest "value" version)
    2 tablespoons worcerstershire sauce
    1 tablespoon soy sauce
    1 teaspoon english mustard
    tabasco sauce, to taste

mix it all together in a cup then pour over meat and marinade for a few hours (or overnight) - it's pretty good!
  • I made some bar b q ribs in the slow cooker yesterday as a 1st go!

Sauce was excellent and a mix of half a red onion, half a sweet chilli pepper, big splodge of tom sauce/worcester/hp/soy, 2 or 3 spoon fulls of honey,a clove of garlic, ground black pepper. This made a running dark brown smelt like bar b q sauce.
I only had 8 ribs that were in 2's (there is only 2 of us) and it was a 1sst attempt.

I did google the recipe for slow cookers and it said on low for 8 hours, so I set it going at 8 and came home at 3 to find it over cooked, burnt slightly one 1 set of 2.
We still ate them, to try the sauce more than anything, which was good!

I would do them again if I wasn't out as long in the day as they probably only needed 4 hours.

you can buy american bbq sauce in the supermarkets. they tend to put them in odd places though. I have seen them with cook-in- sauces, with table sauces and in speciality sections. Paul Newman has BBQ in his range of sauces. expensive though - far cheaper to follow the recipes above.

this is similar to what I use.
    Tom puree
    balsamic vingar
sugar (brown if you've got it but white if not)
    worcestershire sauce
    soy sauce
    english mustard powder

I don't tend to use quantities just mix it to taste :D

  • I make a 'basic' sauce with equal amiunts of red and brown sauce.
I then add extra ingredients to make up what the style of sauce i want.
I add chilli's and garlic for a 'hot' sauce, add a teaspoon of honey or Golden syrup to sweeten to taste, and it makes it 'sticky' if you know what i mean ..... very good for marinades ....

My version is identical to yours but without the mustard and the addition of garlic. Like you I make it up as I go along. :D

The best bbq sauce I ever had, was one made last year by my hubby. It consisted of throwing every odd end of bbq sauce we had to use them up into a bowl and mixing. They were mainlytable sauces. Just a shame he'll never be able to create another one exactly the same.
  • This is the last condiment in my cupboard I can't make myself and it's sooo expensive!

Does anyone have a good recipe before BBQ season starts?

Yup, I used this one, got loads of compliments...

    1 cup apple cider vinegar

    1 cup ketchup

3 tablespoons dark brown sugar (I used light brown as all I had in)

    1 tablespoon mustard

1 tablespoon of molasses (I used treacle, same thing ish)

    1 tespoon salt

1/2 teaspoon crushed red pepper (dreid chilli pepper)

Mix all together, make sure sugar dissolves in, put into a bottle and Robert's your mother's brother.
