  • My neighbour has just given us a lovely homemade fish pie in cheese sauce with potato on top (drool, boast :D), but we can't eat it tonight or tomorrow as I'd already planned those meals.
    If it will freeze OK, will it cook again from frozen or would I defrost it first?

    If the fish has not previously been frozen it should not be a problem.
    I would defrost and cook but it would cook from frozen. Cooking time would depend on the depth of the pie if cooking from frozen to ensure it was thoroughly cooked through.
    Everything has its beauty but not everyone sees it.

    I would double wrap in greaseproof paper, then wrap in cling film a couple of times, freeze and then defrost overnight in the fridge, and then re-heat thoroughly probably at 190 for about 30-40 mins depending on the depth of the pie. I would leave foil over the tatties for the first twenty mins so they dont burn and then take it off for the remainder.
    What a lovely gesture from your neighbour, especially in this day and age when some people dont even know the names of their neighbours.

    We had a bbq yesterday and as a side dish i oven roast some baby potatos in butter, garlic and rosemary..added a bit of rock salt and black pepper, they were delish!

    I would like to have these more often but i dont want to have to have my owvn on for 3 hours a night to cook them so i was wondering if they would be ok to freeze? If i made a large batch, let them cool and freeze in small portions? If this would be ok, how would you recommend i re-heat them? If i just defrost and then zap them in the micro wave i presume they will cook by be soft where as I would like them to retain some of the crispyness?

    Any ideas? Could i put them in foil and then reheat on the bbq as I was thinking of having them with things like cajun fish (cooked in the bbq)?

  • Hi,

    If I used packaged smoked ham instead of bacon in a carbonara, would I be able to freeze some of it for later?
    Many packaged meats I buy say `keep refridgerated` and don`t say they are suitable for freezing.
    So if I browned and crisp-ed up the ham would it be ok to freeze it as it had gone to `another level` - I mean like you can freeze things raw, then can cook it and freeze it and this would be the next stage.

    I've done it many times :)

    Lots of people here make chicken and ham pies and freeze those so I don't see a problem. Just follow usual rules of cooling quickly and re-heating til piping hot.

    I freeze sliced ham all the time.
    The only downside I have noticed is that the meat can be a bit 'wet' when defrosted, but it tastes fine (and can be dried a little if need be).
    I actually prefer wafer thin sliced ham in carbonara tbh!
