Hi Diana,
Banana cake freezes really well. Sometimes I freeze it whole and other times I slice and wrap it individually so that I can lift it out for lunchboxes.
As your thread has dropped down the board I've added it to the quick questions on freezing thread because your query may help others.

When I was doing my usual ritual of raiding the reduced fridge in Tesco in May, I bought a box containing 2 "Finest" scotch steak pies that were on their use by date (9th May) and bunged them straight in the freezer when I got home.
Now I have just pulled them out of the freezer having forgot all about them and put them in the fridge to defrost. I was just wondering if they'd still be alright considering it has been over 6 months. The back of the box states that you should consume within 1 month when freezing, but I've eaten stuff before outside of the stated dates. Just wondering what everyone else thinks? Should I, shouldn't I?0 -
I'm sure they're perfectly SAFE to eat, but unless they've been well wrapped the meat inside them might have become a little dried up and frosted. However, if you make up a small batch of OXO type beef gravy to serve with them separately, that should get over any possible problem.0

We cooked some pork fillet yesterday and the remainder of cooked pork has been sitting in the fridge overnight. I was meant to eat it today for my lunch, but forgot and had something else instead. Can i now freeze that pork or is it too late?

Definitely. I often freeze cooked meats from Sunday lunch in small portions to use in sandwiches or stir-fry.0 -
