I don't freeze pastry very often but my own experience find that it's better frozen in the uncooked state. I've found that when cooked pastry is frozen, thawed through and then reheated it has gone through so many different states that it tends to become very fragile and starts to disintegrate.0 -
Morning lovely people,
Can I freeze banana cake? Just trying to use up the last of the brown bananas, and wondered if I made 2 banana cakes I could freeze one of them?
Thanks,
Di x0 -
Not tried to freeze a banana cake before but if I have bananas which have gone a bit far, I bung them in the freezer in their skins, just as they are, then fish them out when I want to make the cake. HTH!0

Banana cake freezes really well. I make huge batches and slice it and then wrap individually for my DS1 to take to school. I just wrap it in foil. Not sure of the defrost time for a whole cake, but pieces of it defrosts well in the microwave.
Hope that helps0 -
I would freeze banana cake. Just wrap it well and defrost before unwrapping so it doesn't attract more moisture.
Why not cut it into half before freezing to be more MS? If I take a whole cake out of the freezer, it gets eaten more quickly.:o0
