I've not had a great weekend. I have signed up for a 3 month coaching season to try and get fitter / shift the weight as I am not managing it on my own. Inevitably that means tracking steps, synching devices, uploading very detailed food consumption etc. etc. The hassle and effort that has created has been grim, time consuming and stressful - I have told the coach this morning that I am stopping with the App for a bit! I think that is in part why I have not slept well for 3 nights on the bounce when I had been sleeping reasonably since Christmas.
Lunch with my friend on Saturday was okay but it was incredibly busy, we hadn't booked a table and ended up on bar stools on a bench rather than a proper table and the rain pounding on the plastic roof above us made talking quite difficult. The rest of Saturday was dominated by tracking etc (as above) and the mis weather …
Sunday was then dominated by the Bedford finally leaving which meant an early start, so I didn't get my usual quiet, slow time that I get on Sunday mornings. She got stuck in wet ground / mud coming out of the shed, so the garden is well and truly churned up down there, it took ages to load of all the spares (hulking lumps of metal) and Mr KK was down all day, because although he'd made the decision to sell her, he'd spent 5 years on the restoration and in all honesty she was an unusual truck and the last one he is ever likely to own. He got teary as she finally left … She did do 100 miles under its own steam in 4 hours, which is the longest she has ever been driven anywhere and I think he was quite proud that she did that 💖
Anyway! Today is a new day!! Time to total up the positives.
- I did manage to go up and down the stairs for up to 2 minutes and my coach and I think we have identified an issue with my feet - not a great surprise - will be good to know what he thinks I / we should do to improve them.
- The beyond INFURIATING tracking and logging has shown me that I am eating waaaaay too much fat!! 🫨 I have gone through some recipe books and started thinking about alternatives I can have instead of high fat options that are still not UPF. I will shop differently and start some of that next week. In the meantime I have halved my mozzarella ball today! 🤣 (Can you freeze these in their plastic bags, does any one know?)
- I made GreyingPilgrim's Lemon and chickpea soup recipe and divvied it up into 6 portions. It smelt amazing - even Mr KK was showing an interest, until he realised there were 2 kinds of pulses in there! 🤣

- I will continue anyway …. Books 'sold' and parcelled up as shared above.

~ Did get some time in the garden yesterday in spite of all the Bedfordness and cleared another half veg bed that didn't get cultivated at all last year. Found 3 bramble stalks in there! 🫨 Very glad to have got those out before they got any bigger. Ran out of time and energy to broadfork and spread compost, and I need to relocate strawberry plants and foxgloves from there before I do, but that can be a job for next weekend, weather permitting … 🤞

KajiKita - yes you can freeze mozzarella in the bag it comes in. If you have opened the bag (to half the cheese), don't discard the water - put that in a container and put the half ball in with it to freeze. I'm not saying you can't freeze mozzarella 'naked' as it were - I've just never tried it, and I wonder if it would be prone to freezer burn very quickly - much like it would possibly (?) 'dry' out in the fridge if it was uncovered/not wrapped. But i have certainly bought mozzarella YS'd in the past and chucked them in the freezer (unopened) to use another day.

One of the things I learned doing the Zoe programme was to leave plenty of time for my body to process fat (I'm a poor fat processor). So a little fat for lunch (I don't eat breakfast) and the majority of it at the end of the day (as I have a long fasting period between 8pm-ish and midday). Fibre also helps counteract some of the impact of the fat.

I've frozen naked mozzarella. Normally I buy it to eat with a salad or to put on a pizza. If I have used it come it's BBD I open the pack and drain it and then slice it ready as I would for pizza. I then lay it out on plastic wrap and bag it up in a single layer if possible. When I have a pizza I just peel off however many slices I want (usually too too many!!) and pop them on the pizza and just give it a couple of extra minutes to ensure the cheese is nicely melted….mmmmmm….. Anyways I figured if you buy a frozen pizza there's either shredded or slice mozza on it so this should be ok.
