Has anyone tried making these with strange flour? By strange I mean gluten / wheat free flours.

Oh no, Snowy Owl, I can't think what's going wrongI wish I could come and help! I've taken to making them without even measuring now...you could try a bit more oil, as they are quite adaptable, and this might make the dough easier to knead and roll out? I have never tried doing them from scratch under the grill but you could try under cooking them in the pan, leaving them still doughy but starting to colour, piling them up, then when you have them ready, grill them quickly (and carefully!) one at a time like you would bought ones? I have done half cooked chapatti like breads, on an arrangement over the fire, engineering bricks (I think that's them, you know, the ones with holes in?) piled on their side to make a stand which you can slot the handle of a barbecue grill, and this put over the fire and the breads cooked very nicely on that. It follows of course that you could do that over a barbecue but if you start with raw dough on a grill I think it might be too floppy and bend/get stuck so slightly cooking them first might help. I really wish I could make these work for you!
Incidentally I tried to warm a frozen one up in the bottom of the oven yesterday, while making toast, but forgot about it, and it went crispy. But it was really nice, crunchy rather than hard, and I'm going to experiment with them a bit more to make crisp altertnatives. I saw this suggested on Saturday Kitchen a few weeks ago, tortillas cut in to wedges, put in a bowl and drizzled/mixed with oil and then put in the oven for a few minutes to crisp, so there would be a chance to flavour them or the oil before cooking them.0 -
Slightly off topic but when you've mastered how to make those tortilla wraps or if you've got some going spare you can then cut them into triangles and brush both sides with olive oil. Then sprinkle over a topping of your choice eg parmesan, black peppers/ Lay them on a tray and bake for 10 mins....hey presto tortilla chips!

You can also use them to make a GF lasange, friend of mine makes this regularly for her son.
If you also want to try using a GF flour in the tortilla recipe I can't see it being a problem, would maybe make a small amount at first incase it's not nice (knowing how expensive GF flour is wouldn't want you to waste it)One day I might be more organised...........

I usually fry some chicken/bacon and peppers, onion and mushrooms until cooked.
I arrange the mixture onto the wrap in a line down the middle, put some sliced cheese on top of the mixture, pull both sides of wrap into the middle so they overlap and secure with a cocktail stick or two.
Stick them on a baking tray and cook in pre warmed oven for about 5 mins. Keep your eye on them as they can burn if you leave them in too long
The cheese melts into the filling and they have yummy crispy edges.
I have done them like this with all types of hot fillings.

Calling those who make their own!
What sort of flour do you use? Have read various recipes.. some bread flour, some with cornmeal.
I'm desperate to have a go at these, as they're my kids favourite type of bread... give them the grated cheese, ketchup, coleslaw and they're away...... but for the ingredients in the wraps they're expensive I think.
