    PIP, the key thing is to really gently sweat flavour out of your base vegetables for some minutes before you add water.  Chop the veg up into fine dice, add your fat and your aromatics, lowest heat then top with some some crumpled foil or crumpled baking paper (the fat wrapper works) to keep the steam in and give it a few minutes on lowest heat so the veg sweat their flavoursome juices out into the fat before you add your stock and any thickener.

    I felt quite tired after my physical therapy session so I had a quick dinner and had a warm shower. I bought some really cosy socks from Amazon. I'm about to settle in and carry on with The Good Wife. I got a cosy dressing gown with a hood from New Look in the sale so I will put that on too. :)

    And do not go wild on the leeks! Otherwise you will get a very sharp tasting soup. Everything in proportion.

    Let us know how you get on? I'm going to make some soup myself this evening using up old vegetables, so much less of a faff in a soup maker than having to attend to a stockpot. I just want to chop my veg and go!

    Inspired by this thread I am going to make leek and potato soup for tomorrow night! I over ordered leeks last week on my shop so needs using up  :smiley:

    I'll be walking my dog and then snuggling down with my book (Whale Fall by Elizabeth O'Connor) - the forecast is cold and damp for tomorrow and I've a busy Saturday planned so will conserve my energy after a heavy week work-wise.

    Seems like soup is popular for a cosy Friday.

    @redofromstart - I'm glad you shared your leek and potato soup expertise with PIP.  I'm like @Rosa_Damascena and use a soup maker so I'd need to find an impressive way to describe - chop leeks, potatoes, bit of celery, bit of onion.  Season and add stock.  Turn on soup maker using creamed soup function.
