IME, withdrawals were always next working day (though it's been while since I made any).

No, it has always been the same day for me. I always mede withdrawals in the morning so I'm not sure about afternoon and evening withdrawals.

Ditto, I did that a couple of weeks ago and it seems to be working fine either way. Not the quickest (i.e. Nationwide to Chase etc) but it gets there in a few hours during the working window.

With Chase bonus expiring, it the Gatehouse easy access the best current option for pure easy access? I already have a fixed saver with them too. Can you apply through the app as can't see it?

No option on the app 
You'll have to do it on the site logged in 
Existing customers should simply login to your account and go to 'Open New Account'.
