  • Hi everyone.
    gorgeous day here today - really hot in the sun.
    Today’s plan is
    B banana and yog
    L Greek salad HEa feta and olives (2)
    D pitta pizza made with HEb and passata plus lots of veggies. It also has low fat mozzarella to go on top that I’ll syn up before I put it on - may do some SWchips to go along side if it looks a bit of a small dinner. Rest of family are having “proper” bases done in the pizza oven.

    Off to see/stay with MIL and FIL tomorrow so no idea what will be on offer but I shall make the best of it.

    Can someone check a couple of syn values for me please?

    M&S pork sausages - pack of 6
    M&S Old English sausages - pack of 6

    Just by the calories they're coming out at 8.5 syns each! Sorry can't post the nutritional values as have thrown away the packaging when splitting the packs up.

    The pork sausages are 6 or 6.5 @joedenise depending on which pork sausages. The old English ones are 7.Will post later.

    Thanks @maman.  Bit better than they worked out on the calories then!  Will only be having one each time!  DH wanted to try them - I was looking for the low fat ones but they didn't have any.

    Thanks everyone for your kind words 😍 she goes to Mind or should, but she says i'm ok now and does not go, she needs to go constantly but you can't tell her.  It's like someone flicks a switch and she's off 😢 Her marriage breakdown 8/9 yrs ago caused this, she'd been married 25 yrs when he left her.

    It has not helped i have been REALLY busy this week with work, can't complain but it's nuts 😂

    I didn't have KFC today, couldn't be bothered to make it 🤣 so i had prawns, whole tea was 2 syns and half hexa for cheese coleslaw

    No wonder your DSis has MH issues @bubbs - can't be easy for her having to deal with a marriage breakdown after so long. I hope she is at least stable and can find a way back to some sort of happiness xx Your meal looks lovely as always xx

    The peanut butter chicken recipe is from the Fast Feasts SW cookbook but I'll write it here:

    Serves 4, 2.5 syns per portion, ready in 20 minutes

    400g dried pasta*
    4 skinless, boneless chicken breasts, sliced*
    3 peppers (any colour) deseeded and roughly chopped
    4 spring onions, thinly sliced
    1 garlic clove, crushed
    5cm piece of root ginger, peeled and crushed
    2 level tbsp peanut butter, crunchy or smooth
    1 tbsp soy sauce
    Juice of 1 lime
    pinch of dried chilli flakes

    Cook the pasta.
    Once pasta is on, spray a large non-stick frying pan with low-cal spray and put over a medium heat. Fry the chicken for 8-10 minutes until cooked through, transfer to a plate and set aside.
    Spray the pan again, throw in peppers and cook for 5 minutes, then add the spring onions and cook for another 5 minutes. Stir through the garlic and ginger and cook for 1 minute.
    Drain the pasta and return to the pan, reserving 100ml cooking water in a jug. Add the peanut butter, soy sauce, lime juice, chill and 3 tbsp cooking water to the pasta, stir in the chicken and heat it all through, adding more of the reserved pasta cooking water if you want a wetter sauce. Season to taste.

    *We did 450g chicken and 300g of pasta last night and it made 5 big portions so adapt accordingly!!

    Tonight we've had Lime, Chilli and Soy Salmon from the same book with boiled rice, tenderstem broccoli and mini sweetcorn. Really tasty and so quick!

    Need to have a bath and get ready for bed soon as we'll be up at 3.30am for our flight to Crete!!!

    We've had nothing but rain for two days @Jellybaby. Resorted to putting the heating on today, mainly to get the washing dry! 

    I've been reading along but not got around to posting.

    I've stayed on plan and until tonight's wine syns, only had half a syn for marinated salmon yesterday. I did weigh in at the surgery and lost almost a pound (0.9) since last week. I'm now just under target, according to the GP's scales. 😁
