18 hours soaking, changed water half way and then again just before I switched the pot in, 5 minutes instant pot, and then left for a few hours till I took the lid off = nicely cooked

A good day exploring a new to us local nature reserve. My new favourite local walking place.On the way back we hesitated at the two plastic pubs serving all day food but instead went home and I did chicken and bacon in the air fryer for a warm salad.The tastiest meal this week was roasted butternut squash with tomato and chilli puy lentils and crumbled feta. Quartered the BNS lengthways, drizzled olive oil, salt and into the oven till soft (30-40 minutes), chopped some red and yellow peppers into inch cubes, olive oiled and 10 minutes in the oven. Passata with onions and garlic in, warmed, chilli paste, paprika, bit of marigold cooked for ten then added the peppers, once the BNS was nearly ready added two pouches of puy lentils and then reduced it till it thickened. That does sound really tasty. It's when I see recipes like that I regret that MrEH is a lentil-refuser.

I can't see why it wouldn't work with green lentils either, I just happen to have some pouches of puy that I bought on offer a while back. The meal that set it off was puy/BNS and goats cheese with balsamic, but was a little too dry. The leftover lentils worked well with poached eggs.
