    Welcome back @Longwalker you've done amazingly well. Good new about the new job too, sounds great!

    1lb isn't too bad @beanielou but agree that's is SO easy to put it on!!

    I was in the office yesterday - got in early and left late. Ended up binning my usual overnight oats - just didn't fancy them at all and opted for a croissant (so naughty...) Lunch was LO pork bolognaise, 2 satsumas and an apple. We watched the England Samoa rugby match on playback last night and crisps were involved. Feel a bit ropey this morning - just shows how saturated fat affects me - not good.

    WFH today. I have to take my ID to be checked for my new role at lunchtime. Food will be:

    B - poached egg, spinach, mushrooms, 1 x WM toast - P, S, 1/2 HEB
    L - (SW lunch bowl) chicken tikka and rice, 2 satsumas, apple - free, S
    D - Marmite pasta - free
    HEA - milk
    1/2 HEB - hifi
    Syns - possible 0 - we shall see!

    @TakeItEazy - you asked about the peanut butter chicken pasta recipe:

    Serves 4

    Syns 2.5 per serving

    Ready in 20 minutes
    • 400g dried pasta
    • Low calorie cooking spray
    • 4 skinless, boneless chicken breasts
    • 3 peppers, deseeded and roughly chopped
    • 4 spring onions, thinly sliced
    • 1 garlic clove, crushed
    • 5cm piece fresh root ginger, peeled and crushed
    • 2 level tbsp peanut butter
    • 1 tbsp soy sauce
    • Juice of 1 lime
    • Pinch of dried chilli flakes
    • 2 tbsp chopped coriander

    Cook the pasta according to the pack instructions.

    Once the pasta is on, spray a large non-stick pan with low-calorie cooking spray and put over a medium-high heat. Fry the chicken for 8-10 minutes until cooked through then transfer to a plate and set aside.

    Spray the pan again, throw in the peppers and cook for 5 minutes, then add the spring onions and cook for another 5 minutes. Stir through the garlic and ginger and cook for 1 minute.

    Drain the pasta and return to the pan, reserving 100ml cooking water in a jug. Add the peanut butter, soy sauce, lime juice, chilli flakes and 3 tbsp cooking water to the pasta, stir in the chicken and heat through, adding more of the reserved cooking water if you want a wetter sauce. Season to taste, stir through the coriander and serve with salad.

    Morning all, a fairly early start for me today as have a waxing appointment this morning and will then head to the shops to pick up what's needed - have run out of chicken thighs and they are a must in the freezer and down to last half bag of mince so more of that needed especially as I'm making chilli for dinner tonight!

    It's definitely darker in the mornings now - I can usually tell what the time is by how much light there is creeping into the bedroom but if there's light coming in now then I've overslept!  Can't even see my watch as no back light or luminous hands on it!

    That's not a bad gain over a month @beanielou but as you say it shows how easy it is to go from bottom to top end of range but I suspect all us target members have done it at some stage.  I'm sure you'll soon lose that again, unlike me that's still in the top half of range and have been for most of this year, even going out for a few weeks!

    Today's plan:

    B - weetabix, milk, blueberries - HEB; part HEA; S
    L - fig and feta salad - HEA2; S; F
    D - chilli & rice (using HM tomato and chilli sauce) - P; S; F

    HEA1 - milk
    HEA2 - feta
    HEB - weetabix
    Syns - none planned

    I agree @Coxy11, it's so easy to fall back into too many treats and gain like @beanielou over a few weeks. I always do it when I'm on holiday but make myself draw a line when I get back.

    At home, I tend to eat a few more syns in the weeks after WI (need to check syns for corned beef 🤔) then pull back. It works for me most of the time but I wish I wasn't always hovering at the top of target range. 

    I like to have plenty of all the basics in the freezer too @joedenise. Chicken thighs and mince are a must. Not just for SW but for economical mse meals.

    Today's EE plan - 
    B- HEB porridge, HEA milk, berries (S), banana (F) 
    L- beef and vegetable soup (P, S, F) 
    D- corned beef hash (P, F, S), cauliflower, cabbage, broccoli (S)
    Syns - tbc
    ETA - I'm calling it 4 for my portion as I'm hoping for some left for tomorrow.

    Beanie the scenery is amazing, weather supposed to change tomorrow :( but we have been lucky and keeping our fingers crossed, not even wore a cardi!

    Photos are brilliant @bubbs.  Glad you're having a good time.  Haven't been to Devon for years.  Lovely area.  Think the weather's due to change nearly everywhere over the next day or two.  Definitely getting colder but only back to what is normal for this time of year but think we'll all notice the change!
