Any way I can convince my principled wife to stop giving away £500 a month?

Given the OP has now done 2 threads on the same topic, with similar advice being given in both, I'm wondering how / if they'll be using the advice?
Your thread title here talks about a "principled wife" but her "principles" seem to be directed almost exclusively to her serving financially an already wealthy church/cult and her Mum (who I'm also not entirely convinced is in need of the cash) and not to financially taking care of her nearest and dearest (her husband and children).
OP I really think all you can do here is change your stance on this. Your wife is very unlikely (I'm sorry to say) to suddenly change and completely flip her financial priorities (which is what you're asking for), so all you can do is change your stance to the situation. That may mean separation and divorce, and seeking custody for your children, or it might mean something else.

The children's savings should be protected in an accounT that cannot be withdrawn until the child is 18.
Or an account with you as trustee so that your wife cannot withdraw from it.

I've watched a couple of documentaries on the american mega-churches and honestly the whole thing feels like it should be illegal.
I don't usually suggest watching youtubers - but for those 'out of the know', watch www.youtube.com/watch?v=hTfKpAWkgJY for a summary of what I mean (apologies - it is 30 minutes, and a bit overdramatised with the music and narrative, such is the flavour of youtube).
Pastors are able to build, tens, if not hundreds of millions of dollars in wealth through 'tithing'. They suggest giving the church as much money as possible and 'the lord' will return it with interest. Nevermind the fact they're all flying round in private jets and living in mansions. So brainwashed are their audience, they openly brag about it.
Unfortunately from all the posts I've read from the OP, it seems the OP's partner has been indoctrinated into one of these cults...

Yes, I was reading one of the slightly more barking ones which was trying to explain why when you’re in debt it’s better to keep giving money away to the church because you need God’s help more than ever. Don’t actually recall that being in the Bible but there you go.All shall be well, and all shall be well, and all manner of things shall be well.
