Slight change to last Thursday's dinner that was going to be chilli but ended up being a Kung Po to use up the leftover chicken meat. Friday's "undecided" was lightly fried cod fillets since I bagged a couple ys at the Co-op. This week's meal plan:
Sat (today) - H/m tomato & red pepper soup, corned beef sandwiches
Sun - Beef slices (from freezer), greens, carrots, mash
Mon - Pork steaks in BBQ sauce, butter beans, potatoes
Tue - Sausages in onion gravy, mash, greens
Wed - Scampi, chips, mushy peas
Thu - Cornish pasty, mash, greens
Fri - ??? Could be egg & chips!
Sat - Seafood platter
Bread maker has done its job this morning and I've used up half a large tin of evaporated milk to make a SC rice pudding that we can have with fruit or a dollop of jam/lemon curd. Nicer (and cheaper) than the pots from the SM.Be kind to others and to yourself too.3 -
Keep trying to get back into meals planning and something always gets in the way! I have gone over my budget this month so need to use what we have this week though so here goes,
Today- Hm pizza, veg sticks
Sat- tacos & rice
sun- faggots, chips & peas
monday- sweet and sour with noodles & veg
tuesday- pasta & garlic bread
wed- unsure
Thurs- fish fingers, noodles and veg

S - tbc
S - Roast sirloin, red chimichurri, green veg, baby spuds
M - Dal, rice and naan
T - Out for dinner
W- Chicken thighs with a chorizo, red pepper and chickpea sauce.
T- Sausage or bacon & bean one pan pasta.

Lots of things from the freezer again this week. It's nearly empty apart from bread stuff for DH!
F - Fakeaway KFC rice box
S - fish pie, green veg
S - chicken breast and rice tray bake
M - Cottage pie, green veg
T - beef stew (casserole veg from freezer)
W - butter chicken and rice
T - Fakeaway KFC, chips, beans, corn on the cob, coleslaw

Quite quite a lot of using up and some items from the freezer this week. Will do a Lidl top up shop tomorrow and I picked up some bits I can’t get there when I nipped to sainsburys for milk earlier.
Sat - leek and mushroom omelette, sweet potato fries, baked beans
Sun - sausage, new potato and red pepper traybake
Mon - sausage and red pepper pasta, broccoli
Tues - Thai red chicken curry, noodles, sugar snap peas
Wed - salmon with creamy leeks and beans
Thurs - getting lunch at work event so eggs or beans on toast
Fri - Mediterranean lentils, spinach and sun dried tomatoes with tuna steak or halloumi
Going to make leek and pea soup (with thanks to caronc for the idea 🙃)4 -
I’m trying to get back into meal planning having recently moved. I’ve unpacked my combi microwave and slow cooker. The previous owners left me a double oven which consists of a large electric fan oven and smaller electric oven/grill. If I use the oven I will try and fill it to be more economical on electricity usage.Sat - 1/2 sweet chilli chicken pizza & 2 garlic bread slices, salad
Sun - beef stew (slow cooker)
Mon - pork loin steak in jerk sauce, (slow cooker) skinny fries & corn on the cob, salad
Tue - lamb madras (slow cooker)
Wed - Cajun chicken tray bake with Mediterranean veg & rice
Thu - chicken and peppers in black bean sauce and rice
Fri - 1/2 sweet chilli chicken pizza & 2 garlic bread slices, salad
Snacks - cheese, tinned pineapple, bananas, grapes.Any leftover portions from the slow cooker will be frozen for the following week.I will also make some soup in the slow cooker for lunches. I am thinking curried parsnip soup and a veg soup with a couple of handfuls of various bits of pasta / spaghetti & butternut squash soup.0% credit card £1360 & 0% Car Loan £7500 ~ paid in full JAN 2020 = NOW DEBT FREE 🤗

Change of plan already! I thought I'd got out some bacon for breakfast from he freezer but it's actually pork steaks so tomorrow's dinner will be pork steaks instead of chicken. We'll have the chicken tonight.

I had a wonderful week away with a friend I hadn’t seen since before Covid. Back to real life and a dodgy boiler, means living out of the freezer as much as possible. I’m expecting to be out to eat twice this coming week, so that’s just 5 main meals to find.

baked sausages, egg, mushrooms, roast shallots and sweet potato wedges x2

Until I get to the shops I’m not sure what soup I will be making or what I’ll be doing for desserts. All depends on what is cheapest, though I think I’ll be tucking a rice pudding with some soaked dried fruit into the oven with the sausages and roast veg.
